Mung Bean Rotini with
Peas and Mint
Ingredients:
· I box Explore Cuisine Mung Bean Rotini
· 2 T. olive oil
· ¾ c. green peas, cooked
· small handful of fresh mint, chopped (reserve a few sprigs for garnish)
· salt and fresh ground pepper to taste
Optional:
· 5 medium strawberries, sliced
· 5 cherry tomatoes, sliced
· plus fresh basil, chopped
2 round red radishes, sliced thin and/or 2 oz. feta cheese, crumbled
Directions:
1. Cook rotini according to package instructions
2. Toss rotini with olive oil, peas, mint, salt and pepper
3. Add optional ingredients if desired
4. Garnish with mint sprigs
